The chili-paste Sambal is an important part of the food tradition in Indonesia. There are different types of sambals in every region, and almost every family has their own type of sambal. Sambal is a very personal and customizable thing. One important thing is that sambal is not only about spicy taste but also about a combination of several flavors that can be combined according to taste. In this workshop, we will learn together with the artist Vincent Rumahloine and his team member Reksi Muhamed Sidik from the community project »Sedekah Benih« in Bandung, Indonesia, to make the simplest sambal together using chilis that are grown in Germany, and then we can start exploring other flavors that can be added. In addition, together with chili expert Alexander Hicks, we will learn about the types of chilies we will provide from the origins, level of spiciness, and characteristics.
